If your family loves spaghetti, try spaghetti squash to change
up the weekly menu. It's a great way to get an extra serving of veggies.
For an extra nutty, cheesy flavour, stir 1/4 cup (60 mL) grated
Parmesan cheese into the cooked and shredded squash, if desired.
To microwave spaghetti squash: cut it in half leaving the skin on. Scoop out the seeds and place halves either skin side up or down in a microwave-safe pyrex dish with a small amount of water. Cook at high heat for 12 to 15 minute or until tender to pierce with fork.
