A delicious winter pudding. Short pastry covered with jam, rolled up, and covered with a syrup. A great favourite with all the family and friends, and I introduced this sweet to a hospital to add to their winter menu.
Ingredients :
- 125 g self-raising flour
- 125 g plain flour
- 125 g margarine
- 100 mls water
- 1/2 cup strawberry jam
Syrup :
- 2 cup boiling water
- 1 tbs margarine
- 1/2 cup sugar
Method :
- STEP 1Sift flours.
- STEP 2Rub margarine into flours.
- STEP 3Add enough water to make a stiff dough.
- STEP 4Roll out into a rectangular shape.
- STEP 5Cover with jam.
- STEP 6Roll up, press sides and ends together, and place in greased casserole dish.
- STEP 7To make the syrup, mix water, margarine and sugar, until sugar has melted.
- STEP 8Pour over roly poly.
- STEP 9Bake at 200C for approximately 40 minutes.
- STEP 10 Serve hot with cream.
